Heath Hiudt got his start in the wine industry at the age of 23 when he became a beverage manager in the Jeff Ruby Culinary Entertainment group in Cincinnati Ohio. Realizing that he needed to learn more about the Italian and American wine list he now managed, Heath turned to reading every book he could get his hands on. Reading books and working daily with wine sparked his interest in growing his wine knowledge.
In 2003, Heath moved to Las Vegas and began working at Nine Steakhouse at the Palms Casino. There he met his future wife, Anuhea Hawkins, who also shared the same passion for wine. Together, they continued their pursuit of education by taking trips to different wine regions, reading books, and enjoying bottles of wine together. In 2006 they both started taking wine education courses with the International Sommelier Guild. Which, he said turned into a “friendly” competition. Upon both completing the Diploma level of the ISG, they were chosen to participate in the Teacher Education Program. After completion they were offered the opportunity to take over the education courses in Las Vegas for the ISG in 2009.
In 2013 after four years of teaching for the ISG, Heath created his own wine education program to be taught at UNLV. Heath created and was the lead instructor for the UNLV Sommelier Academy over the last four years.
For the last 5 years Heath has been working at STK inside the Cosmopolitan Las Vegas running the beverage program.
